Nutritious Recipes
Chicken and Zucchini Poppers (Gluten and Dairy Free)
Serves: 4-5
Ingredients:
- 1 lb. ground chicken breast
- 2c grated zucchini (leave the peel on)
- 2-3 green onions, sliced
- 3-4 Tbsp cilantro, minced
- 1 clove garlic
- 1 tsp salt
- ½ tsp pepper
- (optional: ¾ tsp cumin)
- olive oil, for cooking (or coconut oil, avocado oil, or ghee)
Instructions:
- Add the chicken with zucchini, green onion, cilantro, garlic, salt, and pepper. You can also throw cumin in the mix if you want. The mixture will be wet.
- Spray some olive oil on a medium pan and heat it over medium flame. Make small scoops of meatballs using a heaped tablespoon and add them into the pan. Cook 8-10 meatballs for about 5-6 minutes on one side. Flip them and cook for an additional 4-5 minutes or until they turn golden brown and the centers are cooked through.
- Serve the dish with guacamole, salsa, or your favorite dip.
